VEGAN YOGURT MIXED WITH BLUEBERRY MUFFIN PROTEIN POWDER FROZEN AND DIPPED IN DARK CHOCOLATE DUSTED WITH GRAHAM CRACKER CRUMBS.

INGREDIENTS:
  • 2 CUPS VEGAN YOGURT
  • ½ CUP PROTEIN POWDER
  • 1 TSP VANILLA EXTRACT
  • ¼ TSP SEA SALT
  • 1 CUP FRESH BLUEBERRIES
  • 2 CUPS DARK CHOCOLATE CHIPS
  • 2 TBSP COCONUT OIL
  • ½ CUP CRUSHED GRAHAM CRACKERS
DIRECTIONS:
  1. IN A LARGE MIXING BOWL, MIX TOGETHER THE YOGURT, PROTEIN POWDER, VANILLA EXTRACT, SEA SALT AND BLUEBERRIES. MIX UNTIL WELL COMBINED. WITH AN ICE CREAM SCOOP, INDIVIDUALLY SCOOP THE YOGURT BITES, ADD TO A BAKING SHEET LINED WITH PARCHMENT PAPER.
  2. FREEZE THE YOGURT BITES FOR 2-3 HOURS.
  3. MELT THE CHOCOLATE WITH COCONUT OIL. REMOVE THE YOGURT BITES FROM THE FREEZER AND COAT EACH ONE INDIVIDUALLY WITH THE MELTED CHOCOLATE. QUICKLY TOP WITH GRAHAM CRACKERS BEFORE THE CHOCOLATE HARDENS.
