WITH OAT FLOUR, COCONUT OIL, PROTEIN POWDER, TOPPED WITH COCONUT WHIPPED CREAM, MAPLE SYRUP AND CONFETTI SPRINKLES. 

INGREDIENTS:

  • ⅓ CUP OAT FLOUR
  • ⅓ CUP PROTEIN POWDER
  • ¼ TSP BAKING POWDER
  • 1 TBSP COCONUT OIL + MORE FOR COOKING
  • ⅔ CUP NON-DAIRY MILK
  • 1 TSP VANILLA EXTRACT
  • 2 BANANAS
  • 2 TBSP CONFETTI SPRINKLES

OPTIONAL TOPPINGS (NOT INCLUDED IN NUTRITIONAL INFO):

  • COCONUT WHIPPED CREAM
  • MAPLE SYRUP
  • CONFETTI SPRINKLES 

DIRECTIONS:

  1. SLICE YOUR BANANAS INTO ½ IN SLICES AND SET ASIDE. ADD THE OAT FLOUR, PROTEIN POWDER, BAKING POWDER, COCONUT OIL, VANILLA AND VEGAN MILK TO A BOWL MIX UNTIL IT BECOMES A SMOOTH BATTER.
  2. STIR IN THE CONFETTI SPRINKLES AND BEGIN TO ADD ONE BANANA SLICE AT A TIME. COAT WITH THE BATTER.
  3. HEAT A LARGE SKILLET OVER MEDIUM-HIGH HEAT AND ADD A LITTLE BIT OF COCONUT OIL. COOK THE BANANA SLICES FOR ABOUT THREE MINUTES ON EACH SIDE. 
  4. REMOVE FROM THE SKILLET AND SERVE WITH COCONUT WHIPPED CREAM, MAPLE SYRUP AND ADDITIONAL SPRINKLES IF YOU’D LIKE!
