BAKED TORTILLAS ROLL-UPS STUFFED WITH CHOCOLATE CASHEW BUTTER AND HOMEMADE STRAWBERRY SAUCE

INGREDIENTS:

  • 6 WHOLE-WHEAT TORTILLAS (TACO SIZE) 
  • 1 CUP CASHEW BUTTER
  • ½ CUP BROWNIE BATTER PROTEIN POWDER
  • 1 TBSP COCOA POWDER
  • ½ CUP CASHEW MILK
  • ¼ TSP SEA SALT
  • ¼ CUP MINI CHOCOLATE CHIPS

STRAWBERRY SAUCE:

  • 1 CUP FRESH STRAWBERRIES
  • 2 TBSP HONEY
  • ½ LEMON JUICE
  • ¼ CUP WATER

DIRECTIONS:

  1. PREPARE YOUR STRAWBERRY SAUCE BY ADDING ALL THE INGREDIENTS TO A SMALL SAUCEPAN. BRING TO A SIMMER AND COOK FOR ABOUT 8-10 MINUTES UNTIL IT BEGINS TO THICKEN. SET ASIDE.
  2. MAKE THE CASHEW BUTTER BY MIXING TOGETHER THE CASHEW BUTTER, PROTEIN POWDER, COCOA POWDER, CASHEW MILK, SEA SALT AND CHOCOLATE CHIPS. 
  3. FILL EACH TORTILLA WITH THE CASHEW BUTTER AND A SPOONFUL OF THE STRAWBERRY SAUCE. ROLL UP AND PLACE ON A BAKING SHEET. SPRAY WITH COOKING OIL ON BOTH SIDES AND COOK IN THE AIR FRYER AT 350 F FOR 8-10 MINUTES OR UNTIL GOLDEN BROWN.
  4. SERVE WITH A DUSTING OF POWDERED SUGAR.
