INGREDIENTS:
- 1 ½ CUP GF SPROUTED OATS
- ½ CUP FRUITY CEREAL PROTEIN POWDER
- ½ CUP ALMOND FLOUR
- 1 ½ TSP BAKING POWDER
- 3 TBSP COCONUT OIL
- 2 TBSP HONEY
- ½ CUP GOLDEN MONK FRUIT
- 1 EGG
- 1 BANANA *MASHED*
- 2 TBSP COCONUT YOGURT
- 1 TBSP ORANGE ZEST
- ½ CUP DEHYDRATED STRAWBERRIES
- ½ CUP DEHYDRATED BLUEBERRIES
- ½ TSP SEA SALT
- 4 FRESH STRAWBERRIES (THINLY SLICED) *OPTIONAL*
DIRECTIONS:
- PREHEAT THE OVEN TO 325 F AND LINE A BAKING SHEET WITH PARCHMENT PAPER.
- CHOP UP THE DEHYDRATED STRAWBERRIES INTO SMALL PIECES AND THEN ZEST ONE TABLESPOONS WORTH OF ORANGE ZEST.
- IN A BOWL COMBINE THE DRY INGREDIENTS; SPROUTED OATS, PROTEIN POWDER, ALMOND FLOUR, BAKING POWDER AND SEA SALT.
- IN A SEPARATE BOWL MIX TOGETHER THE WET INGREDIENTS; COCONUT OIL, HONEY, EGG, BANANA, COCONUT YOGURT, AND ORANGE ZEST. FOLD IN THE DRY INGREDIENTS AND THEN THE DEHYDRATED STRAWBERRIES AND BLUEBERRIES.
- FORM THE DOUGH INTO CIRCULAR COOKIES AND LINE THEM ON THE PARCHMENT PAPER. TOP EACH COOKIE WITH A STRAWBERRY SLICE AND ADDITIONAL ORANGE ZEST. BAKE FOR 15 MINUTES!
