INGREDIENTS:
- ⅓ CUP OAT FLOUR
- ⅓ CUP PROTEIN POWDER
- ¼ TSP BAKING POWDER
- 1 TBSP COCONUT OIL + MORE FOR COOKING
- ⅔ CUP NON-DAIRY MILK
- 1 TSP VANILLA EXTRACT
- 2 BANANAS
- 2 TBSP CONFETTI SPRINKLES
OPTIONAL TOPPINGS (NOT INCLUDED IN NUTRITIONAL INFO):
- COCONUT WHIPPED CREAM
- MAPLE SYRUP
- CONFETTI SPRINKLES
DIRECTIONS:
- SLICE YOUR BANANAS INTO ½ IN SLICES AND SET ASIDE. ADD THE OAT FLOUR, PROTEIN POWDER, BAKING POWDER, COCONUT OIL, VANILLA AND VEGAN MILK TO A BOWL MIX UNTIL IT BECOMES A SMOOTH BATTER.
- STIR IN THE CONFETTI SPRINKLES AND BEGIN TO ADD ONE BANANA SLICE AT A TIME. COAT WITH THE BATTER.
- HEAT A LARGE SKILLET OVER MEDIUM-HIGH HEAT AND ADD A LITTLE BIT OF COCONUT OIL. COOK THE BANANA SLICES FOR ABOUT THREE MINUTES ON EACH SIDE.
- REMOVE FROM THE SKILLET AND SERVE WITH COCONUT WHIPPED CREAM, MAPLE SYRUP AND ADDITIONAL SPRINKLES IF YOU’D LIKE!
