INGREDIENTS:
- 1 CUP MASHED BANANAS (1-1 1/2 BANANAS)
- 1/2 CUP OATS
- 1 TABLESPOON COCONUT OIL
- 1 SCOOP BEAM BLUEBERRY MUFFIN VEGAN PROTEIN
- 1/4 CUP CHOPPED PECANS
- 1/2 CUP FRESH BLUEBERRIES
- 1 TEASPOON BAKING SODA
- 1 TABLESPOON CORNFLOUR
- 1/2 TEASPOON VANILLA ESSENCE
DIRECTIONS:
- PREHEAT THE OVEN TO 325℉
- MASH BANANA WITH A FORK IN A MEDIUM BOWL
- MIX IN THE PROTEIN, OATS, AND COCONUT OIL
- MIX IN THE VANILLA ESSENCE, BAKING SODA, AND CORNFLOUR
- ADD PECANS AND BLUEBERRIES AND GENTLY FOLD INTO THE BATTER
- PLACE 6 MUFFIN CUPS INTO A MUFFIN/CUPCAKE TIN AND POUR BATTER EVENLY INTO THE LINERS
- BAKE FOR 15-20 MINUTES
- REMOVE AND ALLOW TO COOL DOWN

Love love love this recipe! So good and easy to make. I do add a splash of macadamia nut milk unsweetened as I felt the mix was a little dry so this gave it that moisture it needed. I make this all the time and they definitely don’t last long in our house!
